Luftbild Eckernförde - Die erste urkundliche Erwähnung als Stadt erfolgte 1302 | Die erste urkundliche Erwähnung als Stadt erfolgte 1302, als Eckernförde als „civitas“ mit Rat, Bürgerschaft und eigenem Siegel bezeichnet wurde. Die Stadt entstand aus Fischersiedlungen am Windebyer Noor und wurde durch eine Burg am Nordufer der inneren Förde geschützt, die 1231 als „Ykernaeburgh“ (Eichhörnchenburg) erwähnt wurde.
